Instructions:
- Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes.
- In a large pot, bring 4 cups of water to a boil. Add the soaked rice and cook until the rice is about 80% done. Drain and set aside.
- In a separate pan, heat some oil and fry the chopped onion until it turns golden brown.
- Add the ginger garlic paste and fry for 1-2 minutes.
- Add the chicken pieces and cook until they are no longer pink.
- Add the mixed vegetables and stir-fry for a few minutes.
- Add the cumin seeds, coriander powder, garam masala powder, and salt. Mix well and cook for 2-3 minutes.
- In a large pot, layer the partially cooked rice and the chicken-vegetable mixture, starting and ending with a layer of rice.
- Cover the pot and cook on low heat for 15-20 minutes, until the rice is fully cooked and fluffy.
- Garnish with fresh cilantro leaves and serve hot.
