Ingredients for Dahibara:

  • 1 cup urad dal (black gram)
  • 1 tbsp ginger paste
  • 1 tbsp cumin seeds
  • Salt to taste
  • Oil for frying

Ingredients for Aludum:

  • 4 boiled potatoes, peeled and mashed
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • Salt to taste
  • Oil for cooking

Ingredients for serving:

  • 2 cups yogurt
  • 2 tbsp sugar
  • 1 tsp roasted cumin powder
  • 1 tsp black salt

Instructions:

  1. Soak the urad dal in water for 4-5 hours. Drain the water and grind the dal into a smooth paste using a blender or food processor. Add ginger paste, cumin seeds, and salt to the batter and mix well.
  2. Heat oil in a deep frying pan. Wet your hands and take small portions of the batter, roll them into balls, and flatten them slightly. Fry the dumplings in the hot oil until they turn golden brown. Remove the dumplings from the oil and place them on a paper towel to drain the excess oil.
  3. Heat oil in a separate pan. Add cumin seeds and let them splutter. Add chopped onion, ginger paste, and garlic paste. Saute until the onions turn translucent.
  4. Add chopped tomatoes and cook until they become soft and mushy. Add coriander powder, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
  5. Add mashed potatoes and mix well. Add 1 cup of water and bring the mixture to a boil. Reduce the heat and simmer for 5-7 minutes until the gravy thickens.
  6. To make the serving mixture, mix yogurt, sugar, roasted cumin powder, and black salt in a bowl. Whisk the mixture until it becomes smooth.
  7. To serve, place 2-3 dumplings in a bowl, pour the hot potato curry over them, and top with the yogurt mixture. Garnish with chopped coriander leaves and serve hot.
