Bamboo Chicken is a unique and flavorful dish that originated in Andhra Pradesh, India. It is prepared by marinating chicken in a blend of spices and cooking it in a bamboo stick. The bamboo stick imparts a smoky flavor to the chicken, making it a truly unique and delicious dish. Here is a recipe for making Bamboo Chicken:

Ingredients:

  • 1 whole chicken, cleaned and cut into pieces
  • 2 cups yogurt
  • 2 tablespoons ginger garlic paste
  • 1 tablespoon red chili powder
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 tablespoon garam masala powder
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 2-3 bamboo sticks

Instructions:

  1. In a large bowl, mix together the yogurt, ginger garlic paste, red chili powder, coriander powder, cumin powder, garam masala powder, turmeric powder, and salt to form a marinade.
  2. Add the chicken pieces to the marinade, and mix well to coat the chicken evenly. Cover the bowl with plastic wrap and refrigerate for at least 2-3 hours, or overnight.
  3. Soak the bamboo sticks in water for at least 2 hours to prevent them from burning.
  4. Preheat a grill or charcoal fire to medium-high heat.
  5. Take a bamboo stick and stuff it with the marinated chicken pieces, making sure to pack them tightly. Leave some space at the top of the stick for air to circulate.
  6. Hold the bamboo stick over the grill or charcoal fire, rotating it occasionally to cook the chicken evenly. Cook for 20-25 minutes, or until the chicken is cooked through and the bamboo stick is slightly charred.
  7. Use tongs to carefully remove the bamboo stick from the grill or charcoal fire, and let it cool for a few minutes before carefully removing the chicken pieces from the stick.
