Paneer Chhole Bhature Recipe:
Paneer Chhole Bhature is a mouth-watering North Indian delicacy that is enjoyed by people of all ages. It is a popular street food and is also commonly prepared in households. The recipe is fairly easy to make and can be whipped up in just a few steps.
Ingredients:For Bhature:
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons oil
- 1/2 cup plain yogurt
- Water, as needed
For Chhole:
- 2 cups chickpeas, soaked overnight
- 1 large onion, chopped
- 1 large tomato, chopped
- 2 green chilies, chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- Salt, to taste
- 2 tablespoons oil
- 1/2 cup paneer, cubed
- Coriander leaves, for garnish
Instructions:
- To make the Bhature, combine the flour, baking powder, salt, and oil in a large mixing bowl. Mix well.
- Add the yogurt and mix well. Gradually add water to the mixture, mixing until a soft dough is formed.
- Knead the dough for a few minutes until it becomes smooth and pliable. Cover with a damp cloth and let it rest for 30 minutes.
- To make the Chhole, heat oil in a pressure cooker. Add cumin seeds and let them splutter.
- Add chopped onions and green chilies and sauté until the onions become translucent.
- Add ginger-garlic paste and sauté for a minute.
- Add chopped tomatoes and sauté until they become soft and mushy.
- Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt. Mix well.
- Add soaked chickpeas and enough water to cover the chickpeas. Close the pressure cooker lid and cook until the chickpeas are tender.
- Once the chickpeas are cooked, add paneer cubes and simmer for a few minutes.
- To make the Bhature, divide the dough into small balls. Roll out each ball into a circle.
- Heat oil in a deep pan. Once the oil is hot, gently slide the Bhature into the oil and fry until it puffs up and turns golden brown. Repeat with the remaining Bhature.
- Serve the Chhole hot, garnished with coriander leaves, along with hot Bhature.
