Ingredients:
- 2 cups mixed vegetables (such as carrots, potatoes, peas, beans, cauliflower, and bell peppers), chopped into bite-sized pieces
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- Salt, to taste
- 3 tablespoons oil
- Water, as needed
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add onions, garlic, and ginger to the pan and sauté until the onions turn translucent.
- Add chopped tomatoes to the pan and sauté for a few minutes until they turn soft and mushy.
- Add all the spices (coriander powder, turmeric powder, red chili powder, garam masala powder, and salt) to the pan and mix well.
- Add the mixed vegetables to the pan and mix well with the masala.
- Add a little water to the pan and let the mixture simmer for 15-20 minutes, stirring occasionally, until the vegetables are fully cooked and tender.
- Once the vegetables are cooked, turn off the heat and let it rest for a few minutes.
- Serve the Mix Vegetable Curry hot with rice or naan bread.
