Ingredients:

  • 2 cups mixed vegetables (such as carrots, potatoes, peas, beans, cauliflower, and bell peppers), chopped into bite-sized pieces
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • Salt, to taste
  • 3 tablespoons oil
  • Water, as needed

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add onions, garlic, and ginger to the pan and sauté until the onions turn translucent.
  3. Add chopped tomatoes to the pan and sauté for a few minutes until they turn soft and mushy.
  4. Add all the spices (coriander powder, turmeric powder, red chili powder, garam masala powder, and salt) to the pan and mix well.
  5. Add the mixed vegetables to the pan and mix well with the masala.
  6. Add a little water to the pan and let the mixture simmer for 15-20 minutes, stirring occasionally, until the vegetables are fully cooked and tender.
  7. Once the vegetables are cooked, turn off the heat and let it rest for a few minutes.
  8. Serve the Mix Vegetable Curry hot with rice or naan bread.
